Chopped liver

Am having company that loves real Jewish delicacies. Chopped liver, made with whole eggs, extra egg yolks and chicken fats is one of their favorites. Not heart healthy. I’ll let you know if they can tell if my chopped liver is real. It is actually parve but it does not taste like nuts, beans or mushrooms like the usual vegetarian chopped livers. I don’t make it with nuts, beans or mushrooms.

It is a myth that liver, eggs or chicken fat have anything to do with raising cholesterol or for that matter increasing the chance that a person will develop cardiovascular (heart) disease. 80-90% of choleserol is made in the body by the liver regardless of how much dietary cholesterol a person eats. Increased cholesterol persay does not mean a person is going to develop cardiovascular disease. A person with risk factors for hear disease would be wise to eat less or minimal high glycemic carbohydrates, white sugar containing foods and eliminate trans (man-made) fats. Eat regularly, avoid alcohol and smoking and learn stress managament techniques. I am a clinical nutritionist in a primary care practice and I work with this condition all the time.
